Mr. Zuhaib Fayaz Bhat obtained his M.V.Sc. in Livestock Products Technology from Sher-e-Kashmir University of Agricultural Sciences and Technology, Jammu and Kashmir, India. His field of specializations includes Livestock Products Technology and areas of interest are Meat Technology, Meat Processing, Dairy Technology, and Animal by Products Technology, and Quality Evaluation. He has published (21) research papers in journals, (12) review/technical articles, (11) books, and book chapters, (12) invited/lead papers contributed as author/co-author. He is also serving as regular reviewer of many national and international journals like Journal of Food Science, Journal of Food Quality, Journal of Food Science and Technology, Indian Journal of Animal Science, Journal of Stored Products and Post Harvest Research, African Journal of Food Science and Technology, etc. James D. Morton is Associate Professor and Interim Dean, Wine Food and Molecular Biosciences at Lincoln University, New Zealand. Dr. Alaa El-Din Bekhit is Associate Professor at the Food Science Department, University of Otago, New Zealand. He obtained his PhD in biochemistry from Lincoln University, New Zealand. He has 30 years of experience in biochemistry and food process engineering. His research focuses on understanding the composition, biochemistry, functionality, and potential applications of proteins from fish coproducts. He has conducted research on fish quality and processing of fish and fish coproducts in the UK, Egypt, and New Zealand. Dr. Suleria has completed his Postdoctoral Research from the Department of Food, Nutrition, Dietetics and Health, Kansas State University, USA. Previously, he was awarded Alfred Deakin Postdoctoral Research Fellowship at the Deakin University, Australia. He did his PhD from the University of Queensland in a collaboration with Translational Research Institute, UQ School of Medicine and Commonwealth and Scientific and Industrial Research Organization, Australia. Before joining the UQ, he worked as a Lecturer in the Department of Food Sciences, Government College University Faisalabad, Pakistan. He also worked as a Research Associate in “PAK-US Joint Project” at the National Institute of Food Science and Technology, University of Agriculture Faisalabad and the Department of Food Science, University of Massachusetts, USA. He has a major research focus on food science and nutrition particularly in screening of phytochemicals/bioactive molecules from different plants, marine and animal sources. Hafiz Suleria has published more than 100 peer-reviewed scientific papers in different high reputed journals.
